Miraval’s Chef Chad provides us a healthy recipe!

Pan Seared Diver Scallop with Roasted Sweet Corn, Poblano Chile & Jicama Relish

Serves 4
Serving size: one 2 ounce fresh sea scallop + 1 ½ tablespoons relish

SCALLOP, LARGE SEA (APPROX 2 OZ EACH) 4 SCALLOPS
KOSHER SALT & BLACK PEPPER TO TASTE
JICAMA, DICED MEDIUM ½ CUP
RED BELL PEPPER, DICED SMALL 2 T
RED ONION, DICED SMALL 2 T
POBLANO CHILE, DICED SMALL 2 T
CORN KERNELS, FRESH 4 T
CILANTRO, RINSED & ROUGH CHOPPED 2 t
PRICKLY PEAR SYRUP 1 t
OLIVE OIL 1 T

Directions:
• Pre-heat two sauté pans, one over medium heat, one over medium high heat
• Add 2 ½ teaspoon olive oil to 1st sauté pan (pre-heated on medium high heat); lightly season both sides of scallops with kosher salt & black pepper and carefully place in sauté pan; sauté for about 45 seconds, and then use a fish spatula or a pair of tongs to flip the scallops over (when they are ready to flip, they will easily release from the bottom of the pan- if they stick, it’s not time to flip yet)
• Add ½ teaspoon olive oil (just enough to lightly coat the bottom of the pan) to 2nd sauté pan (pre-heated over medium heat); sauté jicama for about 30 seconds, then stir in corn, red peppers, red onion and poblano chile and sauté for another 30-45 seconds, then stir in cilantro and remove from heat.

To Serve:
Place one scallop in the center of each plate and spoon a heaping tablespoonful (about 1 ½ tablespoons per scallop) of the jicama, corn and chile relish over top of the scallop. Drizzle a small amount of prickly pear syrup over the scallop.

Tip: Agave nectar or honey may be used in place of the prickly pear syrup

The mulled wine contains fine red wine infused with a seasonal mix of herbs of spices to create a warming drink, which evokes memories of Christmas past at a price of £3.00.

The mince pie consists of the juiciest mincemeat filling complemented with a sprinkling of mixed spices and wrapped in melt in the mouth shortcrust pastry and is priced at £0.80.

The spiced berry cordial includes mouthwatering blackcurrant and aronia juices with a splash of Cotswold spring water and extracts of cinnamon, clove, lemon, nutmeg and orange at a cost of £1.00.

The turkey and stuffing sandwich is made using softgrain bread, the finest chunks of turkey breast and herb infused sage and onion stuffing accompanied by a dash of cranberry sauce and costs £1.80.
